Malzemeler

Hamurun Malzemeleri:
20 gr. yaş maya,
200 gr. (bir su bardağı) ılık su,
250 gr. elenmiş un
1/4 su bardağı zeytinyağı,
1 çay kaşığı tuz.
Garnitürün Malzemeleri:
300 gr. soğan, (piyaz doğranmış),
2 çay kaşığı tuz,
50 gr. siyah zeytin,
karabiber,
1 avuç dolusu kaşer peyniri rendesi,
1 tutam mercanköşk (toz halinde istenirse),
5-6 yaprak fesleğen (olmasada olur)

Hazırlanışı:

Hamuru hazırlama: Mayayı ılık suyun içine atıp karıştırdıktan sonra bir kenara bırakın.
Unu tezgahın üzerine tepeleme yayıp, ortasını havuz gibi açınız. Zeytin yağını ve mayalı suyu boşaltarak unu yedirerek hamuru parmaklarınızın ucu ile işleyiniz.
Hamuru iki elinizin içiyle geri ileri ite ceke yoğrulmasını sağlayınız.Hamurun yapışmasını göz önünde bulundurarak yapışmaması için un serpiniz. 10-15 dakika arası elinize tezgaha yapışmayacak hale gelince top haline getirip unlanmış bir kaba koyup nemli bir bez örterek muhafaza ediniz.gözle hissedilir şekilde hamur kabarıncaya kadar 1-2 saat bekleyiniz.
Ellerinizi unlayıp hamuru, üstüne ellerinizin içiyle vurarak, açın. Açma işlemini bir oklava ile tamamlayıp, 0,5 cm. kalınlığında yuvarlak pizza hamurunu hazırlayın. Pizza Hamur için malzeme
3 su bardağı un
Yarım paket margarin
1 yumurta
1 çay bardağı süt
3 çorba kaşığı yoğurt
1 çay kaşığı kabartma tozu
1 çay kaşığı tuz
1 çay kaşığı kekik

Üs Malzemesi:
3 kırmızı soğan
100 gr pastırma
1 su bardağı rendelenmiş taze kaşar peyniri
3 çorba kaşığı zeytinyağı
Tuz
Karabiber

Oda ısısında bekletilen margarini derin bir kaseye alın. Yumurta, süt, yoğurt, kabartma tozu ve tuzu ilave edin. Unu ekleyip yumuşaklığı kulak memesi kıvamına göre hamur hazırlayın. Top şeklinde kapatıp derin bir kaba alın ve üzerine bıçakla artı işareti çizin. Un serpip nemli bezle örtüp ve 15 dakika kadar bekletin.
3 kaşık zeytinyağını tavada kızdırın. Soğanları piyazlık gibi doğrayıp sote edin. Yarım bardak sıcak su ekleyerek kapağı kapalı olarak 10 dakika pişirin. Gerekirse biraz daha su ilave edebilirsiniz. Tuz ve karabiber serpip harmanlayın. Ayrı birtabağa kevgirle alarak soğmasını bekleyin. Pastırmaların çemenlerini ayırıp ince şeritler halinde doğrayın. Dil peynirini minik küpler halinde kıyın.
Hamuru merdane ile 1 santim kalınlığında açın. Fırın tepsisini yağlayıp hamuru yayın. Üzerine kekik serpip sırasıyla soğanları, pastırma şeritlerini ve peyniri ilave edin. Tereyağı ve sıvı yağ tencereye koyup üzerine un ilave edip karıştırın. Hafif kavrulduktan sonra üzerine bir çay bardağı süt ilave edin. Tekrar az miktarda kavurduktan sonra, beş bardak su ilave edin. Kaynayıncaya kadar karıştırın. 5 dakika sonra ocaktan alın. Ocaktan aldıktan sonra isteğinize göre tuz ve dereotu ilave ediebilirsiniz. Afiyet olsun.

Lemongrass Chicken Recipes


It’s very generous of you, if you have planned to invite some guests over dinner today! So what are you cooking, chicken? Rice? Noodles? Or perhaps a combo of either of them! I thing, your mind’s not made up here! Well, let me help you with that. How about cooking something different today. Something unique like lemongrass. All you need to arrange for is a lemongrass plant from the market or your garden (if you have one) and voila! 8 chicken thighs
1 tablespoon garlic (minced)
1 teaspoon salt
2 tablespoons ginger (grated)
2 sticks lemongrass (chop the white part finely)
2 spring onions (the green and white part finely chopped)
1 tablespoon palm sugar
3 chillies
2 tablespoons vegetable oil
Coriander
1 lime (cut into wedges)
Directions
Check whether the 8 chicken thighs have no extra fat in it. If it has, cut the extra thick parts properly so that the marination seeps through the deep ends nicely. Take 2 tablespoons of vegetable oil and combine all the measured quantities in it. Mix well and leave the entire chicken mixture to marinate for 10-15 minutes. After a while, over high heat, barbecue the chicken turning and twisting all the parts so that they roast well. Poke a fork into the barbecued chicken to check for its cooked condition, if so, serve hot. For decorating the plate, add crisp salad leaves and lime wedges thoroughly garnished with coriander leaves. ½ cup lemongrass (finely chopped about 3 or 4 stalks)
2 tablespoons shallots (finely chopped)
1 tablespoon garlic (finely chopped)
1 tablespoon soy sauce
4 ½ teaspoons fish sauce
1 ½ teaspoons kosher salt
1 tablespoon crushed red pepper flakes
3-4 lb whole chicken (rinsed and patted dry)
2 tablespoons sugar (granulated)
2 tablespoons fresh cilantro (finely chopped)
1 tablespoon vegetable oil
Directions
Take a large cooking pan or dish which can hold the 3-4 lb whole chicken considerably. Add all the ingredients like shallots, soy sauce, fish sauce, garlic, red pepper flakes, sugar and salt to the pan. Leave 2 tbs of lemongrass to add it after the whole chicken is nicely cooked. Now add the whole chicken and mix the marinade thoroughly. Let the marinade seep into the slits and openings of the chicken amply! This Thai recipe requires a few hours of cooking, because the marination period is supposed to be over 3 hours. Keep it in the refrigerator for cooling and marinating for the same duration. After about 3 hours time, bring the marinated chicken to room temperature before it is cooked. Meanwhile, preheat the oven at about 350 degrees F. Place the whole chicken in a roasting pan and cook for about 40 minutes. Keep turning the chicken on its other side, so that both the sides are cooked well. You will see sugar melting from the chicken which would look all juicy and savory. Just about 10 minutes before the chicken is grilled and cooked, add the 2 tbs of lemongrass with 1 tablespoon vegetable oil and cilantro in the pan. Make sure you coat and spread the mixture evenly on the bird so that the taste it would bring out would be even more delicious. Once you are done spreading the mixture, keep the pan in the oven for further roasting. Let it sit for 10 minutes in the oven before you pull it out for carving.Ga Xao Sa (Vietnamese Lemongrass Chicken)Ga Xao Sa is a very refreshing, bright flavored and wonderfully light, Southeast Asian chicken recipe. This Vietnamese recipe is often found on the menu of any Vietnamese restaurants and food joints. Ingredients
1 pound chicken (breast, thighs and boneless – skinless and cubed)
2 teaspoon cornstarch
3-4 stalks of lemongrass (white part minced)
1 teaspoon sugar and pepper
2 tablespoons fish sauce
2 tablespoons shallots (minced)
4 tablespoons vegetable oil (peanut or sesame)
2 cloves garlic (minced)
1 red bell pepper (chopped)
¼ cup of water
1 tablespoon caramelized sugar syrup
Directions
Take a large mixing bowl and mix all the ingredients in it, like cornstarch, sugar, fish sauce, 1 tablespoon of vegetable oil, cubed chicken and so on. Keep it for marination for about minimum 1 hour or maximum 8 hours. After a while when you are ready to cook the chicken, take a separate wok and pour 3 tablespoons of oil in it. Heat the wok with the oil in it, then add shallots and garlic to it and fry them until light brown in color. Next add the chopped bell pepper to the pan, stir it and fry it until it begins to wilt. This takes about 3-4 minutes. Then add the chicken marinade to the pan and continue to fry the entire mixture in the pan until the chicken is thoroughly cooked. Since the chicken was left for marination, it’ll hardly take a while for it to get cooked. Once the whole mixture is fried, immediately reduce the high-heat to low or medium heat and pour in some water, some fish sauce and caramel syrup and leave it to simmer for 5 minutes. Lastly, add seasonings or steamed rice to this delicious medium-spicy lemongrass chicken recipe to garner a rich taste while consuming. Serve hot.

Allow the mixture to simmer on low heat, while stirring it constantly to avoid formation of lumps. Keep cooking till the sauce becomes thick and begins to bubble. Remove the pan from the heat and coat the chicken thighs in the sauce. Transfer the coated drumsticks to a well greased baking dish. Chicken thighs, without skin, 2½ pounds
Medium or long grain white rice, raw, 1½ cup
Medium-sized onion, chopped, 1
Sour cream, ½ cup

Olive oil, 5 tablespoons
Italian or poultry seasoning, 1 teaspoon
Fresh cream, ¼ cup
Chicken stock, 1½ cups
Dry sherry or white wine, ¼ cup
Fresh herbs (basil, rosemary, sage and thyme), finely chopped, 2 tablespoons
Fresh parsley, for garnish, chopped, 2 tablespoons
Freshly ground black pepper, 1½ teaspoons
Paprika, ½ teaspoon
Salt to taste
Instructions for Cooking
Take a medium-sized saucepan and heat the olive oil over medium heat. Once the oil has become hot, place the chicken thighs and cook for about a couple of minutes till they are evenly brown on all sides. Season the chicken thighs with salt and pepper. If you find that the chicken is sticking to the pan, add a few more tablespoons of olive oil. Once the thighs are cooked, remove them from the pan and place them in a bowl. In the same saucepan, saute the onions till they become translucent. Now add the minced garlic and cook till you get the aroma. Transfer the sliced mushrooms to the pan and cook till they become light brown. Pour the dry white wine or sherry (as per your preference) to remove any scraps stuck to the pan. Increase the heat and allow the sherry to simmer till it is reduced to half. Add the chicken stock and continue cooking for about 2 to 3 minutes. Remove the pan from the heat and add the rice along with the fresh and sour cream and stir to combine the ingredients together. Place the pan on the heat, and mix the freshly chopped herbs, paprika and the seasoning. Cook for a minute and remove the pan from the heat. In a casserole dish, make a layer of the rice and chicken, and cover it with an aluminum foil. Bake this in a preheated oven at 375 ºF for about 45 minutes, till all the liquid evaporates and the rice is done. Dry bread crumbs, 1 cup

Mayonnaise, ¼ cup
Freshly ground black pepper, 1 teaspoon
Worcestershire sauce, 2 teaspoons

For making this chicken drumstick recipe, take a medium-sized bowl and combine the mustard, Worcestershire sauce and mayonnaise. In a different bowl, mix the minced chives and bread crumbs together.
