8 chicken thighs
1 tablespoon garlic (minced)
1 teaspoon salt
2 tablespoons ginger (grated)
2 sticks lemongrass (chop the white part finely)
2 spring onions (the green and white part finely chopped)
1 tablespoon palm sugar
3 chillies
2 tablespoons vegetable oil
Coriander
1 lime (cut into wedges)
Directions
Check whether the 8 chicken thighs have no extra fat in it. If it has, cut the extra thick parts properly so that the marination seeps through the deep ends nicely. Take 2 tablespoons of vegetable oil and combine all the measured quantities in it. Mix well and leave the entire chicken mixture to marinate for 10-15 minutes. After a while, over high heat, barbecue the chicken turning and twisting all the parts so that they roast well. Poke a fork into the barbecued chicken to check for its cooked condition, if so, serve hot. For decorating the plate, add crisp salad leaves and lime wedges thoroughly garnished with coriander leaves. You can try steaming some rice and adding that as well to gain a rich taste.Thai Lemongrass Roast Chicken RecipeIngredients
½ cup lemongrass (finely chopped about 3 or 4 stalks)
2 tablespoons shallots (finely chopped)
1 tablespoon garlic (finely chopped)
1 tablespoon soy sauce
4 ½ teaspoons fish sauce
1 ½ teaspoons kosher salt
1 tablespoon crushed red pepper flakes
3-4 lb whole chicken (rinsed and patted dry)
2 tablespoons sugar (granulated)
2 tablespoons fresh cilantro (finely chopped)
1 tablespoon vegetable oil
Directions
Take a large cooking pan or dish which can hold the 3-4 lb whole chicken considerably. Add all the ingredients like shallots, soy sauce, fish sauce, garlic, red pepper flakes, sugar and salt to the pan. Leave 2 tbs of lemongrass to add it after the whole chicken is nicely cooked. Now add the whole chicken and mix the marinade thoroughly. Let the marinade seep into the slits and openings of the chicken amply! This Thai recipe requires a few hours of cooking, because the marination period is supposed to be over 3 hours. Keep it in the refrigerator for cooling and marinating for the same duration. After about 3 hours time, bring the marinated chicken to room temperature before it is cooked. Meanwhile, preheat the oven at about 350 degrees F. Place the whole chicken in a roasting pan and cook for about 40 minutes. Keep turning the chicken on its other side, so that both the sides are cooked well. You will see sugar melting from the chicken which would look all juicy and savory. Just about 10 minutes before the chicken is grilled and cooked, add the 2 tbs of lemongrass with 1 tablespoon vegetable oil and cilantro in the pan. Make sure you coat and spread the mixture evenly on the bird so that the taste it would bring out would be even more delicious. Once you are done spreading the mixture, keep the pan in the oven for further roasting. Let it sit for 10 minutes in the oven before you pull it out for carving.Ga Xao Sa (Vietnamese Lemongrass Chicken)Ga Xao Sa is a very refreshing, bright flavored and wonderfully light, Southeast Asian chicken recipe. This Vietnamese recipe is often found on the menu of any Vietnamese restaurants and food joints. Ingredients
1 pound chicken (breast, thighs and boneless – skinless and cubed)
2 teaspoon cornstarch
3-4 stalks of lemongrass (white part minced)
1 teaspoon sugar and pepper
2 tablespoons fish sauce
2 tablespoons shallots (minced)
4 tablespoons vegetable oil (peanut or sesame)
2 cloves garlic (minced)
1 red bell pepper (chopped)
¼ cup of water
1 tablespoon caramelized sugar syrup
Directions
Take a large mixing bowl and mix all the ingredients in it, like cornstarch, sugar, fish sauce, 1 tablespoon of vegetable oil, cubed chicken and so on. Keep it for marination for about minimum 1 hour or maximum 8 hours. After a while when you are ready to cook the chicken, take a separate wok and pour 3 tablespoons of oil in it. Heat the wok with the oil in it, then add shallots and garlic to it and fry them until light brown in color. Next add the chopped bell pepper to the pan, stir it and fry it until it begins to wilt. This takes about 3-4 minutes. Then add the chicken marinade to the pan and continue to fry the entire mixture in the pan until the chicken is thoroughly cooked. Since the chicken was left for marination, it’ll hardly take a while for it to get cooked. Once the whole mixture is fried, immediately reduce the high-heat to low or medium heat and pour in some water, some fish sauce and caramel syrup and leave it to simmer for 5 minutes. Lastly, add seasonings or steamed rice to this delicious medium-spicy lemongrass chicken recipe to garner a rich taste while consuming. Serve hot.

To understand how much a serving of chicken wings comes to, I’ve pieced together a recipe that is not only heavenly when you dig into it at the end, but so healthy that you’ll be calling others over to enjoy it as well. We’re going to put together a portion of 8 chicken wings, and then break down the science of what these add up to nutritionally.Ingredients Needed
✔ 8 pieces of chicken wings
✔ 1 teaspoon of powdered garlic
✔ Salt to taste
✔ Two tablespoons of lemon juice
✔ 1 cup of panko
✔ 1 cup of flour
✔ 3 eggs
✔ 1 tablespoon of cilantro
✔ 1 teaspoon of pepper
✔ ½ cup of cheddar cheese
✔ 1 tablespoon of barbecue sauce
✔ Olive oil (3 tablespoons)
✔ 1 tablespoon of chili flakes Cooking Items
✔ 2 baking sheets
✔ 1 baking tray
✔ 1 non stick frying panHow to Make this
Take a bowl and coalesce together the eggs (whole), pepper, garlic powder, lemon juice and about a pinch or two of salt. Keep another two bowls to the side, one with the panko and the other with flour. Dip each chicken wing into the egg wash, and then coat with flour and then the panko. Drop each one into the waiting hot pan of the 3 tbsp of olive oil. Within 6 seconds turn them over to their opposite sides, and let it sizzle for another 6 seconds. Take the pan off the gas and empty out the chicken wings onto the baking tray lined with the sheets. Place them strategically apart, and then in a preheated oven of 210°F, let the chicken wings further cook for about 8 minutes.
As that cooks away, get on with your sauce. Mix together in a bowl the cheddar cheese (shredded) and pop it into the microwave for about 10 seconds to allow it to melt. You can put this into a microwave safe bowl and let it sit atop boiling water if you have one of those microwave-oven appliances that is as of now preoccupied with the chicken wings. Once the cheese melts, combine your 1 tablespoon of barbecue sauce, chili flakes and cilantro. Mix it up and then generously slather this onto your chicken wings. Panko is a better alternative to bread crumbs, since the latter can get soggy and not give you a blissful crunch when you dig into them.Calories → 330Protein → 48gFat → 24.5gCarbohydrates → 8g
The calories of this dish as you can see, are a good enough amount to fill up a single meal in a day. Lessen the number of times you chow down on these wings, since too much of it can be a little too heavy for the system. Eat these once a week to not only give in to temptation say over the weekend maybe, but to also keep a tab on how many wings you consume. Have a healthy tomorrow.

All-purpose Flour Vs. Bread Flour

Flour refers to any powder form, produced by grinding cereal grains or roots. We have been using flour since time immemorial. In fact, it is used as a staple food in many regions of the world. Nutrition wise, flour is enriched with high amounts of natural starches and gluten (wheat protein). Food items made from flour include bread, pastries, cakes and other bakery products. Depending upon the source, there are various types of flour such as wheat flour (atta flour), amaranth flour, buckwheat flour, brown rice flour and corn flour.
Wheat flour is the most versatile flour type, which is used in a wide range of products. The bakery products of European and American countries are primarily based on wheat flour. According to the variety of wheat or part of the grain used for producing flour, there are several subtypes like all-purpose flour, bread flour and cake flour. Let’s take a look at the distinctions and benefits of an all-purpose flour vs. bread flour.Difference Between All-purpose Flour and Bread Flour
Both, all-purpose flour and bread flour are sub-types of wheat flour. The difference lies in the source material, production and nutritional value. Accordingly, the usage of both types of flour varies. The following showcases a brief information for better understanding of the difference between all-purpose flour and bread flour.Production
All-purpose flour is a blended product, made by grinding a combination of low and high gluten wheat varieties. On the other hand, bread flour is produced from hard wheat type, which is basically the hard spring crop. At times, other grains like rye and barley are added in producing bread flour.Nutritional Value
Also known as plain flour, all-purpose flour is a low protein flour, whereas bread flour contains high amounts of gluten. One of the all-purpose flour nutrition facts is that the gluten content is not more than 12 percent. Some brands of all-purpose flour contain only 9 percent gluten, while in case of bread flour, the gluten content can be more 13 percent.Versatility

This was all about all-purpose flour vs. bread flour. Based on the purpose of using, each of these flour types is equally valuable in baking bakery products.
