Sponge Cake Recipes from Scratch

If you think that preparing this cake at home is almost impossible, then, it is a misconception. Cake flour – 2 cups
Eggs – 4 (large)
Sugar – 1 cup
Unsalted butter (softened) – 1 cup
Lemon zest – from half lemon
Vanilla extract – ½ teaspoon
Warm water (or milk) – 2 tablespoons

Baking powder – 2 teaspoons
Salt – one pinch
How to Prepare
Blend lemon zest and sugar in a food processor, till they become a fine powder. Now, add softened butter to a bowl, along with this lemon zest-sugar powder. Beat these ingredients for around five to seven minutes or till they get fluffy. The next step involves adding the eggs to this mixture, one by one. After adding each egg, beat the mixture well, so that they get mixed well with the butter. Once done, fold in the lemon juice, water and vanilla extract. Keep this mixture aside. Take another bowl and add the flour, baking powder and salt into it and combine them. You may sift this mixture two to three times, so that they mix well.
The next step is to add almost half of this flour mixture to the egg-butter-sugar batter. Blend them (on low) for a few minutes. Add the remaining mixture and blend for another ten minutes, on medium speed. Blend well till the batter gets a marbled texture with a glossy finish. This mixing step is very important as it is the perfect blending that creates air bubbles, which are responsible for the fluffy nature of the cake. Pour the batter into a greased mold and bake for around thirty minutes in the oven that is preheated to 350 degrees Fahrenheit. Butter – 3 tablespoons

How to Prepare
Take a saucepan and add the milk, along with two tablespoons of butter. Heat the milk on low heat. In another bowl, beat the eggs (on high speed) with two cups of sugar, for around ten minutes or till the mixture gets fluffy and increases in volume. Now, lower the speed of the beater and slowly add vanilla and lukewarm milk that is heated with butter. Mix well and keep aside. Now, combine the flour with baking powder, cocoa powder and salt and sift the mixture two to three times. The next step is to add the flour into the butter-sugar batter. Beat the mixture thoroughly, till the batter acquires a marbled texture and glossy finish. Use the remaining butter to grease the cake pan, into which, you have to sprinkle some sugar, before adding the cake batter. Now, bake the batter for around thirty minutes, in the oven that is preheated to 350 degrees Fahrenheit. Let the cake get cool for ten minutes, before serving.
